A familiar and popular location is getting a makeover by its owners and will soon be home to a new “modern Mexican restaurant” focusing on locally-sourced ingredients.
Eat Local Starkville — which owns and operates Restaurant Tyler, The Guest Room and Bin 612 — told the Starkville Daily News the highly-anticipated Humble Taco concept, which was initially planned for a location on Martin Luther King Jr. Drive along the Highway 182 corridor, will now be in the former location of City Bagel on University Drive, after the eatery closed for good last summer.
Eat Local Starkville confirmed construction began on Humble Taco in mid-January and the expected opening date will be in early May.
Owner and Chef Ty Thames said the goal of the new eatery will be to blend together the flavors of the south with the flavors of Mexico and continue to utilize local farmers for the meats and vegetables incorporated on the menu.
