Squash Casserole

As produce becomes plentiful in backyard gardens and at the Tuesday and Saturday Starkville Community Markets, you may find yourself in need of new ways to use some everyday vegetables like squash. This delicious, easy squash casserole can be quickly modified to incorporate zucchini, spices or other flavors of your choice.

1/4 cup butter
1 pound squash, thinly sliced
1/2 tsp salt
1/2 tsp pepper
1 egg, beaten
1/2 cup mayo
1/4 cup bell pepper, finely chopped
1/3 cup onion, finely chopped
1 tsp sugar
1/2 cup cheese, grated

Melt butter in the bottom of a 9x13-inch baking dish. Layer squash in dish, overlapping slightly, until all squash is used. Sprinkle squash with salt and pepper.
Combine all ingredients (except cheese) and pour over squash. The mixture will settle between the cracks in the squash. Top with cheese.
Bake in a preheated 350 degree oven for 35 to 40 minutes.
